Burnt Meringue Tres Leches
The dessert that converted my pastry chef.
Dark chocolate sponge, three milks, torched Italian meringue. Soak it overnight; it gets better the longer it waits.
Method

Bake the sponge, cool, poke all over with a skewer.

Whisk the three milks, pour over slowly. Refrigerate 6+ hours.

Whip Italian meringue, pipe over the top, torch until darkened.

Finish with gold leaf if the occasion demands it.
