Snapper Ceviche, Aji Amarillo

Acid does the cooking. Use the freshest fish you can find and serve it within ten minutes of dressing.
Method

Toss fish with salt, rest 2 minutes.

Add lime juice and aji amarillo. Stir gently. Wait 5 minutes.

Fold in onion and cilantro. Plate immediately.
